Nutritious protein packed home-made banana bread

Banana bread is an absolute classic, it’s moist and fluffy and fills the house with that beautiful warm baked banana smell. This is a healthier version of the classic dish, it’s filled with delicious pumpkin seeds and sun flower seeds for added crunch and nutrients. It also includes healthy fats like extra virgin olive oil which is good for heart health. Not only that but cut into thick slices this banana bread packs 10g of protein per slice.

Healthy inspiro dietitian banana bread

  • 2 ripe bananas, mashed
  • ¼ cup extra virgin olive oil
  • 1 tbsp of brown sugar
  • 2 eggs, lightly whisked
  • 2 tsp vanilla extract
  • 1 ½ cups of self-raising flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 10 fresh pitted dates, chopped
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds

  • Preheat oven to 160°C
  • Grease and line a loaf tin with baking paper
  • Combine banana, oil, brown sugar, beaten eggs and vanilla extract in a bowl and whisk
  • Sift flour, baking powder and cinnamon together and stir into the banana mixture until combined
  • Stir in the dates and 1/3 cup of pumpkin seeds and 1/3 cup of sunflower seeds
  • Pour mixture into the loaf tin and sprinkle with remaining seeds
  • Bake for 55 minutes or until cooked
  • Let stand for 5 minutes before transferring to a wire to cool
