Inspiro dietitian approved salmon and sweet potato patties
This is one of my back up, always in the cupboard meals and it's easy to make.  Salmon and sweet potato patties are high in omega 3 (great for your brain and heart), they have good quality, low GI carbohydrate and can be served with whatever salad or vegetables you have on hand.

Ingredients (makes 8 - double the mixture to make 16)

  • 400g sweet potato – peeled, chopped and cooked until soft, then mashed
  • 420g tin pink salmon - drained
  • 3 spring onion – finely chopped (don’t be afraid to use the green part also) 
  • 2 table spoon of sweet chilli sauce 
  • Approximately 1 cup polenta (or bread crumbs). Using polenta makes this dish Gluten free 
  • 1 egg

Preparation part 1

  • 1. In a large bowl combine the spring onion and salmon and mix together
  • a. If the salmon has bones, leave the bones in and mash well* 
  • 2. Add the mash potato, egg and sweet chilli sauce , mix well
  • 3. To form the patties you can shape them with your hand and roll in the polenta or for perfectly shaped patties and cleaner hands try this:

Preparation part 2

  • a. Sprinkle a large dinner plate with half the  polenta 
  • b. Using a ½ cup measure sprinkle 2 tsp of polenta onto its base 
  • c. Spoon some salmon mixture into the ½ cup, filling it most of the way
  • d. Turn it over onto the plate (you may need to tap it on the plate) 
  • 4. Heat a non-stick pan and add 2- 3 table spoons of olive oil 
  • 5. Cook the patties until golden then turn and cook until warmed through 
  • 6. Serve with vegetables or salad 


* Bones in Salmon and sardines are edible, keeping the bones in this dish will add to the calcium content which is great for your bones.  

You can also use leftover roast pumpkin or potato in place of the sweet potato
