These Mexican Bowls (or Burrito Bowls as some people call them) are full of fresh ingredients and incredible flavour, this Mexican Bowl recipe is the perfect example of a healthy, hearty meal without sacrificing your taste buds. And remember, Mexican Bowls can really have any list of ingredients you like., so don’t let the long ingredients list scare you, what you put in your bowl is really up to you! That said, this recipe has been tried and tested, and it wins on both taste and health., but changing or swapping out a couple of ingredients will still give a great result.

It should take only 15 - 20 minutes to prepare your Mexican Bowl.
Cooking time is approx 10 minutes
Serves: 6. Makes five 423 gram serves.

Remember,, these nutrition figures are for a fairly large 423 gram serve, you can halve the serving size if desired.
- 1 tbsp extra virgin olive oil
- 500g lean minced beef
- 1 brown onion, diced
- 2 tbsp taco seasoning
- 1 red capsicum, sliced
- 1 yellow capsicum, sliced
- 1 red onion, sliced
- 1 avocado, 3cm cubed
- 5 tomatoes, 3cm cubed
- 1 cup corn kernels
- 1 tbsp lemon juice
- 1 bunch of brocoolini
1. Heat a large skillet on high with extra virgin olive oil. Add beef,and brown onion, and cook until browned. Add the broccolini in around half way through (approx 2 minutes). Add Mexican spice and mix thoroughly.
2. Meanwhile, mix capsicum, onion, avocado, tomatoes, corn and lemon in a large bowl.
3. Distribute, beef and salad into serving bowls.
