How can these banana pancakes only have 2 main ingredients?
These pancakes are only bananas and egg.. There's literally nothing else except cinnamon and vanilla. These four ingredients, mixed well together and given a little love in a fry pan, taste delicious.
An added bonus is that these pancakes are gluten-free and dairy-free. Cook them just right and they'll end up being soft, hot and golden brown, with crispy edges.
They won't taste like normal pancakes...
They won't taste like normal pancakes, so if you don't like the flavours of banana, cinnamon or vanilla then try adding your own twist. But if you don't like the taste of bananas then these pancakes probably won't be for you.
Sara Wells of Our Best Bites describes them as being like "the middle of a piece of French toast," and I will second that description. They are very custard-like with a soft, yielding texture and a creamy melt-in-your-mouth quality. I would also describe them as being like thick crêpes.

Ingredients
- 4 ripe bananas
- 2 eggs
- 1 tsp cinnamon
- 1 tsp vanilla essence
Topping (per serve):
- ¼ cup fat reduced Greek yoghurt
- ¼ cup blueberries
- 3 strawberries

Preparation
- Mash banana in a bowl until smooth.
- Mix in eggs, cinnamon and vanilla.
- Heat a non-stick fry pan. Add 2 tbs of mixture per pancake. (Tip: if you need oil because your pancakes are sticking to the pan macadamia nut oil or extra virgin olive oil are great options - they don't deteriorate when heated and have lots of good fats.
- Reduce heat to medium and cook for about 2-3 minutes. Flip and cook for a further 1-2 minutes or until golden brown.
- Transfer your pancakes to a plate and serve with your favourite toppings.
Healthy Tip from Laura
These pancakes are a healthier take on traditional pancakes! The bonus is that they will help you to achieve 2 serves of fruit per day if you add a little fruit on top. Perfect!
Getting enough fibre?
Adding only one tablespoon of chia seeds provides around 4.5 grams of fibre. Chia seeds are tasteless so won't ruin the flavour of your pancakes. For this mix you could add three tablespoons of chia seeds, that will give you 13.5 grams of fibre. Chia seeds also have other benefits like healthy fats and protein.
